Method

1.Bring the water to the boil in large frying pan; add chicken. Reduce heat; simmer, covered, about 10 minutes or until chicken is cooked. Cool chicken in poaching liquid 10 minutes; drain, shred chicken finely.
2.Meanwhile, preheat grill to hot.
3.Brush bread both sides with combined oil and garlic; toast, both sides, under grill.
4.For the dressing, combine rind, chilli and parsley in a screw-top jar; shake well.
5.Combine chicken and dressing in large bowl; divide among toasts.
