Method
1.Preheat oven to hot, 200°C. Line an oven tray with baking paper.
2.Cut pastry into 4 even squares. Place on prepared tray. Score around each square, 1cm from the edge. Bake for 15 minutes.
3.Meanwhile, heat oil in a frying pan on medium. Saute leek and bacon for 4-5 minutes. until leek is tender and bacon golden. Remove from heat.
4.Gently press down the centre of each pastry square. Spread a little leek mixture over each tart. Make an indent in the centre. Break egg into recess. Scatter tomatoes and a little grated cheese.
5.Bake for 5-10 minutes, until eggs are cooked. Serve with rocket salad.
Bases of pastry can be spread with pesto before adding leek mixture.
