Method

1.Preheat oven to 180°C/160°C fan forced. Grease and line a 21x10cm (base measurement) loaf pan with baking paper, extending paper at long sides for handles.
2.Sift flour, bicarbonate of soda, mixed spice and nutmeg into a medium bowl. Stir in fig and sugar. Make a well at centre; add mashed kumara, butter, egg and milk. Gently stir until just combined. Spoon mixture into prepared pan. Sprinkle top with sunflower seeds. Bake for 1 hour or until a skewer inserted at centre comes out clean. Cool in pan for 10 minutes. Transfer to a wire rack to cool completely. Serve.

Kumara is orange sweet potato. Try mashed pumpkin instead of kumara.
