Method

1.In a large bowl, combine 1 1/2 cups cooked brown rice, a drained and flaked 200g can pink or red salmon, 1/2 cup panko breadcrumbs, 1 lightly beaten egg, 1 tablespoon each chopped pickled ginger, soy sauce and chopped coriander, 2 thinly sliced green onions and 1 seeded and chopped small red chilli.
2.Mix well. Shape into 12 even-sized patties. Toss in 1/2 cub extra breadcrumbs to coat. Chill until needed. Heat enough vegetable oil in can for shallow frying. Cook patties in two batches, for 3-4 minutes each side. Drain on paper towel. Meanwhile, in a bowl, combine 1/3 cup whole egg mayonnaise and 1 teaspoon wasabi. Serve patties with wasabi mayonnaise, salad and lime slices.
