1.Steam potato, cauliflower and pumpkin over a saucepan of boiling water 8 minutes or until just tender. Whisk eggs, milk, cheese and onion in a jug. Season.
2.Meanwhile, heat oil in a 6cm-deep 24cm (base measurement) round flameproof frying pan over moderate heat. Add sausages. Cook and turn 8 minutes or until cooked. Transfer to a board; slice thickly. Return to pan. Reduce heat to low.
3.Preheat an oven-grill to high. Add steamed vegetables to sausage in pan; stir to combine. Pour egg mixture over sausage mixture; stir to combine. Cover and cook 10 minutes or until almost set. Remove lid; transfer pan to grill. Grill 2 minutes or until golden and set.
You can use any flavour of beef or pork sausage, or choose a vegetarian option. Wrap frying pan handle in several layers of foil so it won’t burn under the grill.
