1.Preheat oven to 150°C. Lightly grease a 5-cup casserole dish.
2.In a small saucepan, melt butter on medium. Saute leek 2-3 minutes, until tender. Stir in ham and herbs and cook 1 minute. Cool.
3.In a jug whisk eggs, cheese, cream and mustard together. Season.
4.Place casserole dish into a deep baking dish. Spread ham mixture over base. Pour egg mixture over. Add hot water to halfway up casserole.
5.Bake 25-30 minutes, until just set. Sprinkle with extra herbs and parmesan. Serve with salad.
