Method

1.Squeeze out and discard as much water as possible from grated potato. Combine with remaining ingredients, season to taste.
2.Spray a large non-stick frying pan with oil and heat on medium. Cook large spoonfuls of mixture, in batches, for 4-5 minutes each side, until golden and cooked through. Serve with salad.

This is a great breakfast, light lunch or late supper. Top it with a perfectly poached egg, if you like.
