Ham and cheese croquettes

These delicious croquettes are the perfect way to use up that leftover Christmas ham. Serve with sweet chilli sauce and throw to together a salad with whatever you have on hand

Ingredients

Method

1.Melt butter in a medium saucepan on medium. Add flour and cook, stirring, for 1 minute. Remove from heat and whisk in milk. Return to heat and cook, stirring, until the mixture boils and thickens. Reduce heat to low and simmer for 1 minute.
2.Transfer to a bowl and stir in mozzarella, ham, onion and parsley. Chill until firm enough to handle.
3.Shape into 10 oval croquette shapes. Dust in flour, coat in eggs then dip in breadcrumbs to coat. Chill for 1 hour.
4.Heat 10cm oil in a large saucepan on medium, until a cube of bread sizzles as soon as it is added.
5.Add 5 croquettes and cook, turning, for 2-3 minutes, until golden. Drain on paper towel. Repeat with remaining croquettes. Serve with sweet chilli sauce and salad.

Chilling helps the croquettes to stay together during cooking.
