1.In a bowl, whisk eggs, cream and honey together.
2.Melt butter in a large flying pan on medium heat.
3.Dip 4 muffin halves into egg mixture, allowing excess to drain off. Fry 3-4 minutes each side, until golden. Repeat, adding more butter to pan as required.
4.Serve topped with banana and drizzled with extra honey.
