Method

1.Preheat oven to 180°C. Lightly grease and line a 10cm x 20cm loaf pan with baking paper. Sift flour and spice together into a large bowl. Stir in sugar, fruit, nuts and oat bran.
2.In a jug, whisk eggs, milk and spread together. Add to dry ingredients, lightly mixing until just combined.
3.Spoon mixture into pan. Sprinkle top evenly with seeds. Bake 50-55 minutes, until cooked when tested.
4.Cool in pan 5 minutes before turning onto a wire rack to cool completely. Serve sliced, with cholesterol-lowering spread, if desired.

Adding oat bran into baking, smoothies or pancakes gives you a fibre boost and lowers the GI, so it keeps you feeling fuller for longer.
