Method

1.Heat oil in a large frying pan on high. Saute chorizo 1 minute.
2.Stir in tomatoes, corn, garlic, chilli and pepper; cook, stirring, 1-2 minutes, until hot. Season to taste.
3.Stir parsley through tomato mixture. Spoon over toast and serve.
