Method

1.Sift flour and baking powder into a bowl; stir in sugar. Make a well in centre. In a small jug, whisk buttermilk, ricotta, egg-yolks and butter together; whisk into dry ingredients until smooth.
2.In a large, clean bowl, whisk egg whites until soft peaks form; lightly fold into batter.
3.Heat extra butter in a frying pan on medium. Working in 2 batches, drop tablespoons of batter into pan; cook 1-2 minutes, until bubbles on surface begin to break. Turn and cook 1 minute, until cooked through.
4.Serve pancakes in stacks topped with fruit and drizzled with syrup. Accompany with yoghurt.

These can be cooked in large batches on a barbecue plate.
