Method
1.For each omelette, heat the oil in a small frying pan on medium.
2.In a small bowl, whisk eggs, milk and cream together. Whisk in herbs and season to taste. Pour the egg mixture into the pan, swirling mixture to cover base.
3.Using a spatula, start folding in the sides of the omelette and gradually roll it right up – this should take only 2-3 minutes. Serve omelette topped with watercress.
We used chives, parsley and tarragon for this omelette.
