1.Preheat oven to 200°C (180°C fan-forced). Line a 20 x 30cm lamington pan with baking paper.
2.Melt butter in a frying pan on medium heat. Add leek and green onion and cook for 4 minutes, until leek softens. Spoon into prepared pan and top with feta, peas and mint.
3.Whisk together eggs, milk and flour and season. Pour over vegetable mixture. Bake for 30 minutes, until eggs are set and frittata is golden. Refrigerate and cut into squares to serve.
