Method
1.Cut centers from 4 thick slices of ciabatta or other bread using an 8cm scone cutter and discard.
2.Heat 1/4 cup olive oil in a large, non-stick frying pan on medium. Add bread slices and flatten with an egg slice. Cook for 2 minutes, until golden.
3.Turn over bread and break 1 egg into each hole. Fry for 2 minutes, until cooked to taste and bread is golden.
4.Meanwhile, fry 8 slices pancetta (or bacon) in a separate frying pan on high for 3-5 minutes, until crisp.
5.Warm 400g can diced tomatoes (or 1 cup prepared tomato salsa) in a small saucepan on medium.
6.Serve eggs with pancetta, tomatoes and rocket leaves.
