Ingredients

Method

1.Preheat oven to moderate, 180°C. Lightly grease 4 x 1-cup ramekins.
2.Place cod in a frying pan. Cover with water; bring to a simmer on medium heat. Remove from heat; peel off skin. Flake flesh with a fork.
3.Divide fish between ramekins. Sprinkle with onions and top evenly with spinach.
4.Pour 50ml cream into each ramekin; season to taste. Break an egg into each dish; sprinkle evenly with cheese.
5.Bake 10-15 minutes, until golden and cooked through. Serve with crusty bread.

Remove fish from the water as soon as bubbles begin breaking.
