Egg and bacon rolls
Method
1.TOMATO RELISH: Heat oil in a saucepan on medium. Cook onion and garlic for 4 minutes, stirring, until onion is tender. Stir in remaining ingredients. Bring to a boil, stirring. Reduce heat to low and simmer for 30 minutes, until thickened. Season to taste and transfer to a bowl to cool.
2.Cook bacon in a non-stick frying pan on medium heat for 3-4 minutes, until beginning to crisp. Remove from pan. Spray six egg rings with cooking oil spray. Place in frying pan and crack an egg into each. Cook for 2 minutes, turn and cook for another minute, until whites are firm but yolks still runny.
3.Place lettuce inside roll, top with bacon, an egg and a dollop of Tomato Relish. Serve immediately.
This relish recipe makes 2 cups.
