Method

1.Preheat oven to 190°C. Mix muesli ingredients together in a large bowl, then tip into a shallow oven dish lined with baking paper, scraping in any bits clinging to the bowl. Bake for about 20 minutes, stirring with a large metal spoon several times during cooking (move toasted parts of the muesli to the middle of the dish and the untoasted parts to the outer edges to encourage even browning and avoid burning) or until lightly coloured. Cool and store in an airtight container.
2.To serve 2 portions, peel apples and grate immediately then toss with lemon juice. Put a mound of yoghurt in each of the bowls, top with grated apple and scatter with crunchy muesli. Drizzle with some extra maple syrup if desired.
