Method
1.Sift flour, baking powder and a pinch of salt into a large bowl. Stir in sugar. Place water in a large jug and sprinkle over yeast. Allow to stand for 5 minutes until bubbles begin to form.
2.Add yeast mixture to flour mixture. Using an electric mixer beat until smooth.
3.Heat a lightly greased frying pan on medium. Place four lightly greased egg rings in pan. Once heated, fill each ring three-quarters full with mixture.
4.Cook crumpets on low heat for 12-15 minutes or until surface is filled with holes. Remove egg rings and turn to cook other side for 1-2 minutes or until golden. Set aside and keep warm. Repeat with remaining mixture.
5.In a small bowl, using an electric mixer, beat butter for 2-3 minutes or until pale and creamy. Beat in maple syrup until well combined. Spread maple butter over warm crumpets and drizzle with extra maple syrup, if you like. Serve with strawberries.
