Creamy potato salad

You can't beat a great potato salad. Serve this as an accompaniment to meat or fish at a barbecue, dinner party or a family meal.

Ingredients

Method

1.Place potato in a large saucepan of salted cold water. Bring to boil, covered. Partially remove lid and cook for 8-10 minutes or until just tender. Drain well.
2.Transfer potato to a bowl. Toss through combined mayonnaise, juice, mint, mustard and onion. Season to taste.
3.Serve warm or cold, topped with extra mint.

Chopped hard-boiled eggs, capers and crispy prosciutto can be added, if liked. This salad is delicious with grilled meat or fish.
