1.In a bowl, combine corn, flour, coriander, onion and egg. Mix until just combined. Season to taste.
2.Heat a non-stick frying pan on medium. Spray with oil. Working in 2 batches, pour 1/4 cups batter into pan, flattening with a spatula. Cook 3-4 minutes each side, until cooked through.
3.Transfer fritters to a plate; cover with foil to keep warm.
4.In same pan, fry bacon 4-5 minutes each side, until golden and crisp.
5.Serve fritters with crispy bacon, tomato relish, extra coriander and rocket leaves. Accompany with crusty bread.
Try adding some grated zucchini or chopped red capsicum to the mixture.
