Method
1.Preheat oven to 200°C (180°C fan-forced). Lightly spray 2 X 1-cup ovenproof dishes with oil.
2.Combine cream, chives and parmesan in a medium jug. Pour evenly into prepared dishes. Break 2 eggs into each dish. Season with salt and pepper. Place dishes in a small roasting pan on a baking tray. Pour boiling water into roasting pan to reach a third of the way up side of dishes. Bake for 10 minutes or until egg yolks are just set.
3.Spread toast thickly with salmon cream cheese. Serve with baked eggs.
Add finely chopped smoked salmon to cream mixture before baking.
