Method

1.In a saucepan, combine mixed berries and icing sugar.
2.Heat on low, stirring occasionally, for 5-8 minutes, until berries are thawed and juicy. Meanwhile, toast brioche or raisin bread and spread evenly with cream cheese.
3.Drizzle toast evenly with honey and top with warm berry mixture. Serve with a dollop of cream and a few mint leaves.

Make honey easier to drizzle by heating in the microwave oven on high (100%) power for 10 seconds.
