1.Preheat oven to 180°C (160°C fan-forced). Lightly grease a muffin pan. Line each recess with a slice of prosciutto.
2.Sift self-raising flour into a large bowl. In a jug, whisk together milk, butter, eggs and chives. Add to flour, stirring until just combined.
3.Spoon mixture evenly between recesses until two-thirds full. Thinly slice 2 par boiled chat potatoes and arrange over top of muffin mixture. Sprinkle each with a little parmesan and fresh thyme leaves.
4.Bake muffins 20-25 minutes, until golden. Cool in pan 5 minutes before transferring to a wire rack.
