Method
1.Heat olive oil in a medium frying pan on high. Cook bacon 1-2 minutes each side, until crisp and golden. Drain on paper towel.
2.Meanwhile, half-fill a deep-frying pan with water. Add vinegar. Bring to the boil, then turn heat to low (simmering gently around edge). Working with 1 egg at a time, crack eggs into a small bowl, then slide into water. Cook 2-3 minutes, until egg whites have set.
3.Arrange bacon, eggs and all other toppings on platters with bagels, for guests to help themselves.
