Asparagus soldiers

Who doesn't love dunking toast soldiers into a runny egg yolk? This version is more than just comfort food thanks to the addition of tasty green asparagus. So you can dunk that too!

Ingredients

Method

1.Snap off tough ends of asparagus. Plunge asparagus into a saucepan of boiling water and cook for 2-4 minutes, until bright green. Drain and place on a paper towel.
2.Meanwhile soft boil eggs. Serve asparagus with eggs in cups, seasoned with freshly ground black pepper.
3.Serve with toast soldiers.

White asparagus can also be used.
