Method
1.Preheat oven to moderate, 180°C (160°C fan-forced). Lightly grease a 5-cup oven proof dish.
2.Place apples in a saucepan with half the sugar and water. Cook, stirring, on medium heat for 5-8 minutes or until apple is tender. Drain excess liquid. Spoon apple into prepared dish.
3.In a bowl, using an electric mixer, beat eggs until fluffy. Add remaining sugar, 1 tablespoon at a time, beating until thick and creamy. Beat in vanilla.
4.Sift flour and spice together over batter. Fold gently through batter. Pour over hot apple.
5.Bake for 25-30 minutes or until sponge is cooked when tested with a skewer. Serve hot with cream.
Golden delicious, royal gala and pink lady are other apple varieties that are good for cooking.
