Apple and spice souffles

Ingredients

Method

1.Preheat oven to hot, 200°C (180°C fan-forced). Spray four 3/4-cup ramekins with oil spray. Sprinkle with 2 tablespoons of the caster sugar, shaking out excess. Arrange on a baking tray.
2.In a small saucepan, combine apple, 2 tablespoons of caster sugar, water and spices. Cook uncovered, on medium heat, for 8-10 minutes until apples soften. Using a hand blender, process until smooth. Transfer to a medium heatproof bowl.
3.In a small bowl, using an electric mixer, beat egg whites until soft peaks form. Gradually add remaining caster sugar, beating until firm peaks form and sugar dissolves. Lightly fold into warm apple mixture.
4.Divide mixture evenly between prepared ramekins. Sprinkle evenly with cinnamon sugar. Bake for 10-15 minutes, until puffed and golden. Serve immediately.

You will need about 2 medium apples for this recipe.
