Method
1.Preheat oven to 180°C (160°C fan-forced). Lightly grease a 1.5-litre (6-cup) oven proof dish.
2.Combine milk, sugar, sago, sultanas and cinnamon in a medium saucepan over low heat. Bring to the boil, reduce heat. Simmer, stirring occasionally, for 5 minutes or until thickened and sago is almost translucent. Cool slightly.
3.Stir in the eggs and three-quarters of the apple. Pour into prepared dish. Cover with remaining apple. Sprinkle with cinnamon sugar. Bake for 45 minutes or until golden and set. Remove from oven. Stand for 5 minutes. Serve pudding dusted with icing sugar.
