Full of dried fruit, sultana bran and nuts, these muffins make a healthy after-school snack.

Ingredients

Method

1.Preheat oven to moderate, 180°C (160°C fan-forced). Spray a 12-hole muffin pan lightly with oil.
2.Using an electric mixer, beat cottage cheese, sugar, eggs and extract in a large bowl.
3.Lightly fold in flour, 1 cup sultana bran cereal and remaining ingredients.
4.Spoon into prepared pan until two-thirds full (spoon the mixture into each pan hole in one go – do not double fill). Sprinkle tops with remaining sultana bran cereal.
5.Bake for 25-30 minutes. Transfer to a wire rack to cool slightly – they are best served warm.
