Hawaiian muffins

Method

1.Heat oven to 180C. Lightly grease a 12-hole standard muffin tin or line muffin tin with paper cases.
2.In a large bowl, beat together the oil, sugar, eggs and vanilla. Stir in pineapple, mashed bananas and dried papaya or mango.
3.Stir in the flour, just enough to combine into a lump-free batter. Spoon into prepared tins and bake for 20 minutes or until puffed and golden brown.
