Method
1.In a large bowl, whisk egg whites until frothy. Gradually add the icing sugar, stirring between each addition, until a smooth paste forms.
2.Split icing into two bowls. Tint half icing yellow and the other half pale blue.
3.Spoon a third of yellow icing into a piping bag fitted with a small plain nozzle. Pipe halfway around the border of each biscuit, then across centre in a zig-zag pattern. Dry 15 minutes. Repeat with blue icing for other side of each biscuit. Dry 15 minutes.
4.Combine remaining yellow icing with half of the lemon juice. Spoon into a piping bag with a larger plain nozzle. Fill in outlined yellow shapes by flooding with icing (reserve about 1 tablespoon). Repeat with remaining blue icing. Set aside 3 hours or overnight, until firm.
5.Using scissors, cut mini marshmallows into thirds. Press onto tops of biscuit to make feathers. Use black writing icing to draw on eyes. Cut small pieces of red frog to make beaks and secure with dots of reserved icing.
