Pink icing
Method
1.Heat oven to 160C fan bake. Line 12-hole muffin pan with paper cases.
2.Place all ingredients in a bowl and beat with an electric mixer on low speed to combine. Beat for one minute more until mixture is pale and smooth.
3.Spoon mixture into paper cases. Bake for 15-20 minutes or until a skewer inserted in the centre of one cupcake comes out clean. Remove to a wire rack to cool, then ice when cold.
4.Prepare pink icing by beating all the ingredients together. Spread icing over cupcakes and decorate with sprinkles, as desired.
