Coffee coconut slice

1 1/2 cups plain flour, sifted; 1/4 cup cocoa powder; 1 cup caster sugar; 1 1/2 cups desiccated coconut; 250g butter, melted and cooled; 2 tbsp instant coffee mixed with 1 tbsp boiling water

Method

1.Heat oven to 160C fan bake. Grease and line a 17 x 27cm slice tin with baking paper. Place flour, cocoa, sugar and coconut in a large bowl. Add melted butter and coffee mixture, then mix well to combine.
2.Press mixture evenly over base of the prepared tin. Bake for 20 minutes or until a skewer inserted into the centre comes out clean. Allow to cool completely in pan.
3.Cover cold slice with coffee icing. To make coffee icing, place icing sugar and instant coffee in a bowl. Add melted butter and two tablespoons of hot water. Stir until smooth, adding more water if necessary.
4.Stand at room temperature until set. Cut into squares. When stored in an airtight container, this slice will last for up to one week.
