Cheese and salmon pie

The fluffy and creamy cheese and salmon filling in this savoury family pie works perfectly with the crumbly, golden crust. Serve with a fresh side salad for a tasty and nutritious dinner dish.

Method

1.Preheat oven to 200°C (180°C fan-forced). Lightly grease a 25cm springform pan. Line base with baking paper.
2.To make crust: place all ingredients in a food processor. Pulse until mixture resembles breadcrumbs. Set aside 3/4 cup of mixture, for topping. Press remaining mixture into prepared pan to cover up sides.
3.Place salmon in a food processor with sour cream, cheese, eggs, tabasco and onions. Be careful not to over-process. Pour into pan, over crust. Sprinkle reserved crust mixture on top. Bake 40 minutes, Remove and stand 15 minutes, before serving.

This pie can be served warm or cold and makes a tasty dish for buffets and picnics, along with a crisp green salad. It may be prepared several hours ahead and then baked when needed.
